- Pork Loin 300g
- Onion 100g
- Tomato 220g
- Garlic 2 cloves

- Consommé 2 tsp
- Salt 1 pinch
- Black Pepper to taste
- Olive Oil to taste
- Dried Parsley to taste
Steps
- Prepare 2 cloves of garlic and crush them with the side of a knife.
- Coarsely chop 100g of onion.
- Remove the core from 220g of tomato and coarsely chop.
- Make incisions with a knife into the sinews between the fat and lean parts of 300g of pork loin. 【Chef's Tip!】 Scoring the meat will make it tender. This is the same cooking technique used for meunière or pork sauté.
- Heat 1 and 1/2 tbsp olive oil in a frying pan and sauté the crushed garlic.
- Heat olive oil in a separate frying pan over high heat until well warmed. 【Chef's Tip!】 It's best to bring the meat to room temperature before grilling.
- Grill the pork loin in the warmed frying pan. Reduce the heat while stir-frying the sauce.
- Add the chopped tomatoes to the sauce pan with the sautéed garlic and onion, and simmer over high heat, crushing them as they cook down.
- Once the meat is grilled, transfer any remaining meat juices from the frying pan to the sauce pan.
- Add 2 tsp consommé, 1 pinch of salt, and black pepper to taste to the sauce and adjust the flavor. 【Chef's Tip!】 If you want to enhance the tomato flavor, MSG is recommended; for a bouillon-like flavor, consommé is recommended.
- Drizzle with a small amount of olive oil at the end.
