- Onion 60g
- Garlic 5g
- Maitake mushrooms 50g
- Eggs 2
- Canned whole tomatoes 1/2 can
- Pizza cheese 50g

- Salt and pepper a pinch
- Chili powder 1 tsp
- Consommé 1 tsp
- Salt 2 pinches
- Sugar 2/3 tsp
- Black pepper to taste
- Parsley to taste
Steps
- Finely chop 5g garlic.
- Roughly chop 60g onion and 50g maitake mushrooms.
- Heat 2 tsp olive oil in a frying pan over medium heat.
- Season 200g ground mixed meat with a pinch of salt and pepper, and cook in the frying pan until thoroughly browned. 【Expert Tip!】 To concentrate the meat's umami and create a savory aroma, sear it well over high heat.
- Once the meat is browned, add the finely chopped garlic and sauté until fragrant.
- Add the roughly chopped onion and sauté until translucent.
- Add the roughly chopped maitake mushrooms and sauté until tender.
- Add 1/2 can whole tomatoes and simmer, crushing them with a spatula. 【Expert Tip!】 Use the moisture from the tomatoes to scrape off the meat's umami stuck to the bottom of the pan as you mix. Remaining whole tomatoes can be frozen; freezing breaks down the cells, making them easier to crush when defrosted.
- Add 1 tsp consommé and 2/3 tsp sugar, then mix.
- Add 1 tsp chili powder and mix well. 【Expert Tip!】 Chili powder is a mixed spice with a taco-like aroma. Note that it's different from chili pepper. It's not very spicy, so the given amount is fine.
- Season with 2 pinches of salt and black pepper to taste.
- Level the meat sauce in the frying pan, make two depressions, and crack in 2 eggs.
- Place 50g pizza cheese around the eggs. 【Expert Tip!】 If you place the cheese closer to the center, when it melts, the red sauce at the edges will show, stimulating the appetite.
- Cover and steam over low heat. Turn off the heat once the cheese has melted and the eggs are soft-boiled.
