- Momen Tofu 350g
- Garlic 10g
- Shiso Leaves 5
Seasonings
- [A] Mayonnaise 20g
- [A] Bonito Powder 2g
- [A] Soy Sauce 1 tbsp
- [A] Vinegar 1/2 tbsp
- [A] MSG(Ajinomoto) 4 dashes
- Sesame Oil 1 tbsp
Steps
- Peel 10g of garlic and slice it a little thickly.
- Roll 5 shiso leaves and julienne them.
- In a bowl, add 20g mayonnaise, 2g bonito powder, 1 tbsp soy sauce, 1/2 tbsp vinegar, and 4 dashes of MSG(Ajinomoto), then mix well to make the sauce.
- Wrap 350g momen tofu in kitchen paper and wipe off any surface moisture.
- Heat 1 tbsp sesame oil in a frying pan, add the sliced garlic, and fry over medium heat until crispy to make garlic chips. 【Tip!】 If sliced too thinly, they burn easily, so slice them a little thicker.
- Once the garlic chips turn golden brown, remove them from the pan, leaving the oil behind.
- Add the patted dry momen tofu to the pan with the remaining oil, cover, and grill over medium heat. 【Tip!】 Grilling with a lid on ensures the tofu is heated through, resulting in a delicious finish.
- Once one side is browned, flip it over, continue to cover, and grill until both sides are fragrantly browned. 【Tip!】 Thoroughly browning both sides removes moisture from the tofu, concentrating its flavor.
- Place the grilled tofu on a plate.
- Cut the grilled tofu into 1cm slices and gently wipe off any moisture that comes out from the cut surfaces with kitchen paper.
- Pour the prepared sauce over the tofu.
- Top with the reserved garlic chips and julienned shiso leaves, then serve.
- Optionally, sprinkle with seasoned salt to enjoy a flavor variation.
