Seasonings

  • [A] Lard 10cm
  • [A] Garlic powder 5 shakes
  • [A] Pepper 5 shakes
  • [A] Soy sauce 2 tbsp
  • [A] Mirin (Sweet Rice Wine) 2 tsp

Steps

  1. Add 300cc water, 10cm lard, 5 shakes garlic powder, and 5 shakes pepper to a pot. 【Tip!】 Adding lard gives the ramen richness.
  2. Place the pot over heat and bring it to a boil. 【Tip!】 Add soy sauce after boiling to prevent its aroma from dissipating.
  3. Once the soup boils, turn off the heat and add 2 tbsp soy sauce and 2 tsp Mirin (Sweet Rice Wine).
  4. Add 1 and 1/2 tsp MSG(Ajinomoto) (MSG) (1 heaped spoonful) and mix well. 【Tip!】 Adding too much MSG(Ajinomoto) (MSG) will saturate the umami, so 1 and 1/2 tsp is the limit.
  5. In another pot of boiling water, add 1 serving (70g) Chinese noodles and boil for 6 minutes. 【Tip!】 Boiling the noodles separately prevents the soup flavor from becoming diluted, resulting in a more delicious dish.
  6. Thoroughly drain the cooked noodles and place them in a bowl.
  7. Pour the warmed MSG(Ajinomoto) (MSG) soup over the noodles.
