Main Ingredients (10 buns)

  • 120g Cake Flour
  • 70g Black Sugar
  • 200g Smooth Red Bean Paste (Koshian)
  • 2 tbsp Water
  • 1 tsp Water
  • 3g Baking Soda

    Steps

    1. In a pot, combine 70g Black Sugar and 2 tbsp Water. Heat over medium heat until the black sugar dissolves. Remove from heat just before boiling and let cool.
    2. Divide 200g Smooth Red Bean Paste into 10 equal portions of about 20g each and roll them into balls. Cover with plastic wrap to prevent drying.
    3. In a separate bowl, combine 3g Baking Soda and 1 tsp Water and mix well.
    4. Add the cooled black sugar syrup to a bowl and mix in the baking soda solution.
    5. Sift in 120g Cake Flour and mix until combined.
    6. Lightly flour a cutting board, transfer the dough onto it, and spread it out.
    7. Divide the flattened dough into 10 equal portions.
    8. Line a tray with plastic wrap and lightly dust with flour.
    9. Take one portion of the dough, roll it into a ball with your hands, then flatten it using the base of your palm.
    10. Place a red bean paste ball in the center of the flattened dough. Pinch the edges of the dough together to enclose the red bean paste completely.
    11. Once sealed, place each bun on a 10cm square piece of parchment paper, shape them into neat rounds. Repeat for all 10 buns.
    12. Pour about 1cm of Water into the bottom of a frying pan and bring to a boil.
    13. Once boiling, turn off the heat. Place a steamer rack over the pan and arrange the black sugar buns on it.
    14. Steam over low heat for 10 minutes.
    15. After 10 minutes, turn off the heat and open the lid. Once they are puffed up, the black sugar steamed buns are ready.
