A fundamental and ultimate recipe. Enjoy this exquisite Mapo Tofu at home, just as good as any restaurant. Make sure to thoroughly drain the tofu and finish with a special flavorful oil for an authentic dish.
Ingredients
Main Ingredients (2 servings)
- Tofu
- Ground Pork
Seasonings
- Garlic
- Ginger
- Doubanjiang (Chili Bean Paste)
- Soup stock
- Potato Starch
Steps
- Drain the tofu thoroughly. This is the key! Thoroughly draining the water prevents the flavor from becoming diluted.
- Heat oil in a frying pan and quickly stir-fry the ground pork until browned.
- Add garlic, ginger, and doubanjiang to the browned ground pork and stir-fry. This is the key! Using a slightly generous amount of garlic and ginger is the trick to adding depth of flavor while controlling saltiness. Bringing out the aroma and creating a 'flavorful oil' is the secret to delicious Mapo Tofu.
- Once the flavorful oil is ready, add the soup stock and the drained tofu and bring to a boil.
- Cover with a lid and simmer gently. This is the key! Simmering allows moisture to escape from the tofu, helping the flavors meld and creating a plump texture.
- After turning off the heat, add potato starch in several portions, stirring to prevent lumps. This is the key! Adding it gradually after turning off the heat ensures a smooth texture without lumps.
