Introducing Tuna Mayo Egg Fried Rice! From our easy fried rice series using everyday ingredients, we'll thoroughly explain how to use mayonnaise, which is the key to deliciousness. You can recreate this melt-in-your-mouth, fluffy, and moist exquisite fried rice at home.
Ingredients
Main Ingredients (2 servings)
- 1 small can (oil-packed) tuna
- 300g-350g warm cooked rice
- 2 eggs
- 1/2 long green onion
- 1 tbsp mayonnaise (approx.)
Seasonings
- 1-1.5 tbsp soy sauce
- 1 tbsp sesame oil
- Pinch of salt
- Pinch of pepper
Steps
- Finely chop the white part of 1/2 long green onion.
- Lightly beat 2 eggs and add a pinch of salt.
- Add the entire contents of 1 small can (oil-packed) tuna to a frying pan and stir-fry until the moisture has evaporated and the tuna is crumbly. (Key Step!) By evaporating the tuna's moisture and oil, the flavor becomes concentrated without becoming mushy. Be careful as oil can splatter.
- Push the stir-fried tuna to one side of the frying pan and add 1 tbsp mayonnaise (approx.) to the empty space.
- Melt the mayonnaise and use it as a cooking oil to add richness and umami.
- Once the mayonnaise has melted, add the beaten eggs and stir-fry.
- When the eggs are partially cooked, add the warm cooked rice and stir-fry over high heat. Without removing the pan from the heat, stir-fry as if you're wrapping the rice with the egg. (Key Step!) Stir-fry by pressing the rice against the pan, crushing any clumps and mixing everything together.
- Once the rice is fluffy and separated, mix the tuna and rice evenly.
- Add the finely chopped long green onion and mix everything together further.
- Drizzle 1-1.5 tbsp soy sauce around the edge of the pan and coat everything evenly.
- Drizzle 1 tbsp sesame oil around the edge of the pan for aroma and sheen. (Key Step!) Sesame oil's aroma can easily dissipate, so adding it at the end enhances its fragrance.
- Season with a pinch of salt to taste.
- Serve the fried rice on a plate and sprinkle with a pinch of pepper if desired. (Key Step!) It's also delicious served with chopped green onions, shredded nori seaweed, or pickled ginger.
