A foolproof Hoppy Sai recipe by Wakiya Yuji, easily made in one pot. The deliciousness of meatballs, seafood mix, and fried tofu cakes is concentrated, making it an irresistible dish that will have you reaching for more rice. Packed with plenty of vegetables and nutrients, this is a satisfying home-style meal for both adults and children.
Ingredients
Main Ingredients (2 servings)
- Seafood mix 150g
- Ground pork 150g
- Fried tofu cakes 2 pieces
- Carrot 1/2
- Broccoli 8 florets
- Shiitake mushrooms 4
- Egg 1/2
- Tofu 15g
- Grated ginger 1/2 tsp
- Potato starch 1/2 tsp
Seasonings
- [A] Salt (to taste)
- [A] Pepper (to taste)
- [A] Cooking Sake (Rice Wine) 2 tbsp
- [B] Soy sauce (to taste)
- [C] Oyster sauce 2 tbsp
- [C] Soy sauce 1 tsp
- [C] Pepper (to taste)
- [C] Chicken soup stock powder 1/2 tsp
- Sugar (to taste)
- Potato starch slurry 2 tbsp
- Sesame oil 1 tbsp
- Potato starch (for dusting) (as needed)
Steps
- Cut 1/2 carrot and 8 broccoli florets into bite-sized pieces. Blanch the carrot beforehand.
- Cut 4 shiitake mushrooms into easy-to-eat pieces.
- Cut 2 fried tofu cakes into bite-sized wedge shapes.
- Place 150g ground pork in a bowl.
- Season with a pinch of salt and a pinch of pepper.
- Add 2 tbsp Cooking Sake (Rice Wine) and mix until sticky.
- Add 1/2 egg, 15g tofu, 1/2 tsp grated ginger, 1/2 tsp potato starch, and a pinch of soy sauce. Mix further. (This is the secret!) Adding tofu makes the meatballs tender.
- Pour 300ml water into a pot and bring to a boil.
- Form the ground pork mixture into small balls, smaller than ping pong balls, and drop them into the boiling water. Simmer over medium heat.
- Spread the thawed 150g seafood mix on paper towels and pat dry thoroughly.
- Season the seafood mix with a pinch of salt and a pinch of pepper.
- Lightly dust the entire seafood mix with potato starch.
- Once the meatballs are halfway cooked, add the sliced shiitake mushrooms, carrots, and fried tofu cakes to the pot.
- Cover and simmer over medium heat for 5 minutes.
- Add 2 tbsp Oyster Sauce, 1 tsp Soy Sauce, a pinch of pepper, and 1/2 tsp Chicken soup stock powder to the pot and mix.
- Add the broccoli and the seasoned seafood mix to the pot.
- Cover again and simmer for about 2 minutes.
- Add a little sugar to taste, if desired.
- Pour in 2 tbsp potato starch slurry and stir until the sauce thickens.
- Drizzle with 1 tbsp sesame oil as a finishing touch, mix everything together, and it's done.
