- Potatoes 4 medium
- Onion 1/2 medium
- Thick-cut Bacon 80g
- Garlic 1 clove
- Parsley (for garnish) to taste

- Olive Oil 1 tbsp
- Granulated Consommé 1/2 tsp
- Whole Grain Mustard 1 tsp
- Mirin (Sweet Rice Wine) 1/2 tsp
- Salt and Pepper to taste

Steps
- Cut 4 medium potatoes into bite-sized pieces.
- Place the cut potatoes in a bowl, soak in water for 5 minutes to remove excess starch.
- Slice 1/2 medium onion.
- Cut 1 clove garlic in half, remove the sprout, and mince.
- Cut 80g thick-cut bacon into approximately 1cm wide strips.
- Drain the soaked potatoes, cover loosely with plastic wrap, and microwave at 600W for 6 minutes.
- Heat 1 tbsp olive oil in a frying pan over medium-low heat and sauté the minced garlic until fragrant.
- Once fragrant, add the sliced onion and bacon. Sauté until the onion is about 80% cooked.
- Add the microwaved potatoes and sauté for 1-2 minutes, browning them slightly.
- Add 1/2 tsp Mirin (Sweet Rice Wine), 1/2 tsp granulated consommé, and 1 tsp whole grain mustard. Stir well.
- Taste and adjust seasoning with salt and pepper to taste.
- Transfer to a serving dish and sprinkle with parsley if desired.
