Steps
- Thinly slice the green onions diagonally.
- Place the sliced green onions in a bowl, sprinkle with 1 tsp salt, and rub them by hand. This step enhances the green onion's aroma.
- Bring a large pot of water to a boil and warm your serving bowl.
- Add 1 ramen noodle serving to the boiling water and cook for approximately 2 minutes and 30 seconds.
- In a separate pot, heat 4 tbsp white sesame oil until it just begins to smoke.
- Add the canned scallops (1 can, 60-70g) with their juice to the hot sesame oil.
- Add a ladleful of the noodle cooking water to the pot and bring to a boil.
- Drain the cooked ramen noodles and add them to the pot with the canned scallops.
- Stir in 1 tbsp chicken powder, black pepper to taste, and salt to taste.
- Add 1/3 of the salt-rubbed green onions to the pot and simmer with the noodles for a short while. Simmering the noodles helps them absorb the soup's savory flavor.
