Ingredients

Main Ingredients (2 servings)

  • 300g Potatoes
  • 3 slices Ham
  • 1/8 Onion
  • 1/2 Cucumber
  • 1 Egg

Seasonings

  • [A] 1 tsp Sugar
  • [A] 1 tsp Vinegar
  • [A] Pinch of Salt
  • 2 tbsp Mayonnaise
  • Salt to taste
  • 1 tsp Granulated Consommé
  • Black Pepper to taste

Steps

  1. Cut 3 slices of ham into 1-1.5cm wide strips, then further cut into 1cm cubes.
  2. Thinly slice 1/2 cucumber.
  3. Add 1/3 tsp salt to the thinly sliced cucumber, rub for 30 seconds, and let it sit for 10 minutes.
  4. Rinse the salted cucumber, squeeze out the water firmly, and then pat dry with paper towels.
  5. Grate 1/8 onion. 【This is the trick!】 Grating the onion tightens the flavor of the potato salad, making it taste like it's from a restaurant.
  6. Mix the grated onion with 1 tsp sugar, 1 tsp vinegar, and a pinch of salt.
  7. Boil enough water in a pot to cover 1 egg.
  8. Add salt (amount not specified) and the egg to the boiling water, and boil for 12 minutes to hard-boil.
  9. Turn off the heat for the boiled egg, drain the hot water, and cool in cold water for 10 minutes.
  10. Peel the cooled hard-boiled egg and finely chop it.
  11. Peel 300g of potatoes, remove any eyes, and cut into 1.5-2cm pieces.
  12. Soak the cut potatoes in water for 10 minutes to remove bitterness.
  13. Drain the potatoes and place them in a pot. Add enough water to cover the potatoes.
  14. Add 1 tsp granulated consommé, mix, and bring to a boil over high heat. 【This is the trick!】 Boiling with consommé allows the umami of the vegetables to deeply permeate the potatoes.
  15. Once boiling, reduce to medium heat and simmer for 8 minutes.
  16. Turn off the heat and check if the potatoes are cooked through by inserting a skewer; it should pass through easily.
  17. Transfer the soup used to boil the potatoes to a bowl.
  18. Return the potatoes to medium heat and cook for 1.5 to 2 minutes to evaporate moisture, achieving a powdery texture.
  19. Transfer the powdery potatoes to the bowl.
  20. While the potatoes are still hot, add the prepared onion seasoning (a mixture of 1 tsp sugar, 1 tsp vinegar, and a pinch of salt) to the potatoes and mash and mix them together. 【This is the trick!】 Adding the seasoning while hot tightens the flavor and adds richness.
  21. Once the potatoes have cooled, add the chopped egg, drained cucumber, and cut ham, and mix gently to combine.
  22. Add 2 tbsp mayonnaise and salt to taste, and mix well.
  23. Plate the salad and finish by sprinkling with black pepper to taste.
