  • Sweet Potatoes 300g

Seasonings

  • [A] Granulated Sugar 4 tbsp
  • [A] Water 1.5 tbsp

Steps

  1. Trim the ends off the Sweet Potatoes (300g) and cut them diagonally.
  2. Cut the Sweet Potatoes into batons of the same width.
  3. Place the cut Sweet Potatoes in a bowl of water and soak for about 5 minutes.
  4. Drain the Sweet Potatoes and thoroughly pat them dry with paper towels.
  5. Place the Sweet Potatoes in a frying pan and add enough vegetable oil to cover them completely.
  6. Fry the Sweet Potatoes over medium heat until they are crispy. (Key Tip!) They are ready when they sound crispy when tapped with chopsticks.
  7. Remove the fried Sweet Potatoes and let them drain for about 3 minutes.
  8. In a separate frying pan, combine Granulated Sugar (4 tbsp) and Water (1.5 tbsp). Stir well with a rubber spatula to dissolve the Granulated Sugar.
  9. Heat over medium heat, stirring constantly. Turn off the heat when the edges start to turn whitish.
  10. Add all the fried Sweet Potatoes and toss to coat evenly.
  11. While the heat is off, stir well until the Granulated Sugar crystallizes and the surface becomes crispy.
