Nameko mushrooms, bought for 98 yen per pack, transform into a super healthy, weight-loss soup that thickens without cornstarch! Devised by Ryuji, this incredibly easy and addictive sour and spicy soup deliciously and easily supports your diet.

Main Ingredients (1 Serving)

  • Nameko mushrooms 1 pack (100g)
  • Egg 1
  • Long green onion 1/3 stalk (40g)
  • Water 250cc

Seasonings

  • [A] Chinese seasoning 1 and 1/2 tsp
  • [A] Soy sauce 1 tsp
  • [A] Sake 1 tsp
  • [A] Sesame oil 1 tsp
  • Vinegar 2 tsp
  • Chili oil to taste
  • Black pepper to taste

Steps

  1. Cut off the root end of 1/3 long green onion (40g), halve it lengthwise, then julienne.
  2. Add 250cc water, 1 pack (100g) nameko mushrooms, 1 and 1/2 tsp Chinese seasoning, 1 tsp soy sauce, 1 tsp sake, 1 tsp sesame oil, and the cut long green onion to a pot.
  3. Heat the ingredients in the pot over medium heat and bring to a boil.
  4. Put 2 tsp vinegar into a serving bowl. [Key Point!] To prevent the acidity from evaporating, add the vinegar directly to the bowl, not to the pot.
  5. Beat 1 egg.
  6. Reduce the heat of the boiling pot to low, create a swirl, and slowly pour in the beaten egg.
  7. Pour the soup from the pot into the bowl containing the vinegar, and gently stir the vinegar settled at the bottom with the soup.
  8. Finish by drizzling with chili oil to taste and sprinkling with black pepper to taste.
