An incredibly simple crispy potato snack recipe made with just potatoes and salt. The sweetness of the potatoes and their light, crispy texture make them irresistibly delicious. Perfect as a snack or for when you need one more dish.

- 2-3 Potatoes (Baron variety)
Seasonings
- Salt (to taste)
- Olive oil or Vegetable oil (as needed)
- Pepper (optional)
- Aonori (Dried Green Seaweed) (optional)
Steps
- Peel 2-3 Potatoes (Baron variety).
- Using a julienne slicer, shred the potatoes directly into a bowl. (Key Tip!) When the potato gets small, use a fork to hold it securely while slicing. A finer slicer is recommended.
- Sprinkle a pinch of salt over the shredded potatoes and mix by gently massaging them.
- Take a small amount of potatoes in your hand, squeeze tightly to expel moisture. (Key Tip!) The starch in the potatoes will help them stick together without adding flour. A slightly irregular, imperfect shape is best.
- Heat olive oil or vegetable oil (as needed) in a frying pan over medium heat.
- Once the oil is hot, arrange the squeezed potatoes in the pan and fry until crispy. (Key Tip!) Be careful not to burn them by using heat that is too high.
- Flip them over when the edges turn golden brown.
- Once they are all golden and crispy, drain off the excess oil.
- Sprinkle with pepper or Aonori (Dried Green Seaweed) if desired.
