- Spaghetti 160g
- Oil Sardines 1 can (100g)
- Avocado 1
- Garlic 1 clove
- Red Chili Pepper 1
- Italian Parsley (to taste)
Seasonings
- Olive Oil 1 tbsp
- Lemon Juice 2 tsp
- Salt (to taste)
- Black Pepper (to taste)
Steps
- Bring a large pot of water to a boil and start cooking the spaghetti (160g).
- Peel and pit the avocado (1).
- Finely chop the peeled avocado.
- Heat 1 tbsp of olive oil in a frying pan over medium heat, and add 1 clove of garlic.
- Once the garlic is fragrant, add 1 red chili pepper and continue to sauté.
- When fragrant, add the entire 1 can of oil sardines (including the oil) to the pan. Mash with a spatula and stir-fry to infuse the garlic aroma.
- Add the cooked spaghetti to the frying pan and add a little pasta water.
- Add the finely chopped avocado and toss everything together to coat the spaghetti with the oil sardines and avocado.
- Taste and adjust seasoning with salt (to taste) and pasta water if necessary.
- For finishing, drizzle in a little more olive oil and 2 tsp of lemon juice, and mix briefly.
- Plate the pasta, sprinkle with black pepper (to taste), and garnish with Italian parsley (to taste).
