A recipe for addictive "Devilishly Delicious Pickled Onions" that are ready by simply marinating in sauce and using the microwave. The sweetness of the onions is brought out, and they can be used as appetizers, side dishes for rice, or in various creative dishes.

- 1 Onion (approx. 350g)
Seasonings
- [A] Mirin (Sweet Rice Wine) 50ml
- [A] Sugar 2 tbsp
- [A] Soy Sauce 50ml
- [A] Sesame Oil 2 tbsp
- [A] Vinegar 2 tsp
- [A] Toasted Sesame Seeds 1 tbsp
- [A] Grated Garlic 1 tsp
- [A] Ichimi Togarashi (Chili Powder) (to taste)
Steps
- In a microwave-safe container, combine Mirin (Sweet Rice Wine) 50ml and Sugar 2 tbsp. Microwave on 600W for 1 minute to evaporate alcohol and dissolve sugar.
- Add Soy Sauce 50ml, Sesame Oil 2 tbsp, Vinegar 2 tsp, Toasted Sesame Seeds 1 tbsp, Grated Garlic 1 tsp, and Ichimi Togarashi (Chili Powder) (to taste). Mix well to create the sauce.
- Peel 1 Onion (350g) and cut it into thin wedges about 1cm wide.
- Place the cut onions in a microwave-safe container, cover with plastic wrap, and microwave on 600W for 2 minutes and 30 seconds.
- Loosen the heated onions and add them to the prepared sauce.
- Mix the onions with the sauce. Cover tightly with plastic wrap and then seal the container with a lid.
- Refrigerate for about 2 hours to let the flavors meld.
- After refrigerating and marinating for 2 hours, the onions will have changed color and absorbed the flavors. It's ready! [Tip!] Marinating for more than 2.5 days in the refrigerator can make the flavor too strong. Drain the liquid and store the onions separately.
