Steps
- Cut the broccoli florets from the base where they are easy to cut.
- Cut the top floret into a large piece. For larger florets, make shallow cuts and break them apart by hand to roughly match the size of the other florets. (This is the key!) This ensures even cooking.
- Wash the cut broccoli in a basin of water and lift them out as if scooping.
- Trim the tough base and outer skin of the stem, and remove the core. Slice the core part into 1cm thick pieces.
- Add 1 generous teaspoon of salt to the boiling water and stir.
- Add the broccoli and the sliced stem core, and boil for 2 minutes (or 3 minutes if large). Cover with a drop lid or stir occasionally with chopsticks to ensure even cooking.
- Once boiled, drain in a colander. (This is the key!) If you plunge it into cold water, it will become watery, so let it cool down as is, even if you plan to use it cold later.
