- Separate the egg yolk and white, and mince the green onion.
- Place cooked rice (250g) in a bowl and mix well with 1 egg yolk. [This is the secret!] Coating each grain of rice with yolk ensures fluffy, separated grains.
- Heat 1 tbsp white sesame oil in a frying pan, add the rice coated with yolk, and stir-fry over medium heat. [This is the secret!] Stir-fry thoroughly until the egg adheres to the rice and it becomes fluffy.
- Once the rice is fluffy and separated, add a pinch of pepper and a pinch of salt, and mix well.
- Add 1 tbsp butter and stir-fry while mixing everything. Once the butter has melted and the rice is glossy, gradually add the beaten 1 egg white and mix to combine.
- Finally, add 1 tbsp minced green onion, turn up the heat to high, and stir everything together with large motions.
