This recipe makes sweet potato steamed cakes easily in a frying pan. Using pancake mix, you can enjoy a fluffy, perfectly sweet, and gentle tasting treat. With simple steps and no room for failure, these are perfect for kids' snacks.
Ingredients
Main Ingredients (4-6 cakes)
- Pancake Mix 150g
- Sweet Potato 1 whole (150g)
- Egg 1
- Milk 100ml
Seasonings
- Honey 1 tbsp
- Vegetable Oil 2 tbsp
Steps
- Wash the sweet potato and cut off the ends.
- Slice the sweet potato into 1cm thick rounds, then cut into 1cm cubes.
- Place the cut sweet potato in a bowl and soak in water for about 10 minutes.
- Drain the sweet potato, cover loosely with plastic wrap, and microwave (600W) for 2 minutes. Let cool slightly and set aside a small amount for garnish.
- In a separate bowl, crack 1 egg, add 100ml milk, 2 tbsp vegetable oil, and 1 tbsp honey, then mix well.
- Add 150g pancake mix and mix until just combined and no dry powder remains.
- Add the cooled, heated sweet potato (except for the garnish portion) to the batter and mix.
- Divide the batter evenly into steamed cake molds.
- Decorate the top of the batter with the reserved sweet potato pieces.
- Add about 1cm of water to the frying pan and arrange the molds.
- Cover with a lid and steam over low heat for about 10-15 minutes, then turn off the heat.
- Once steamed, open the lid and remove the sweet potato steamed cakes.
