  • 10 Eggs

Seasonings

  • [A] 90g Sugar
  • [A] 150ml Kombu Dashi (Kelp Broth)
  • [A] 2 tbsp Cooking Sake (Rice Wine)
  • [A] 2 tbsp Soy Sauce

Steps

  1. Preheat oven to 180℃ (350°F).
  2. Crack 10 eggs into a bowl and whisk thoroughly.
  3. Add 90g sugar to the whisked eggs and mix. Then, add 150ml Kombu Dashi, 2 tbsp Cooking Sake, and 2 tbsp Soy Sauce and mix well.
  4. Strain the egg mixture through a sieve into an oven-safe pot or mold.
  5. Cover the mold tightly with aluminum foil. Place the mold in a baking dish filled with hot water.
  6. Bake in the preheated oven at 180℃ (350°F) for 15 minutes.
  7. Remove the aluminum foil and bake for another 10 minutes. (The Key!) Browning the omelette after removing the foil.
  8. Carefully remove the cooked omelette from the mold and cut into desired pieces.
