Gal Sone's mother's taste, Sone family secret croquettes. These croquettes are characterized by their fluffy and gentle flavor, mixed with plenty of vegetables and ground mixed meat in potatoes. They are small and easy to eat, perfect for lunch boxes. Please try making them with your whole family!
Ingredients
Main Ingredients (4 servings)
- 5 potatoes
- 2/3 carrot
- 3 bell peppers
- 1 onion
- Approx. 300g ground mixed meat
- Flour
- Eggs
- Breadcrumbs
Seasonings
- 1 tbsp consommé
- [A] A pinch of salt
- [A] A pinch of pepper
- [B] A pinch of salt
- [B] A splash of milk
Steps
- Cut 5 potatoes into small pieces.
- Place the cut potatoes in a pot, add enough water to cover, and add 1 tbsp consommé. Boil until tender.
- Finely chop 2/3 carrot. [This is the secret!] Use a "Bun Bun Chopper" for finely chopped vegetables.
- Finely chop 3 bell peppers.
- Finely chop 1 onion.
- Heat oil in a frying pan and sauté the finely chopped carrots, bell peppers, and onions.
- When the vegetables are softened, add approx. 300g ground mixed meat and stir-fry. Season with a pinch of salt and a pinch of pepper.
- Drain the water from the tenderly boiled potatoes and mash them while hot.
- Add a pinch of salt and a splash of milk to the mashed potatoes and mix to adjust consistency. [This is the secret!] Add milk if you prefer a softer texture.
- Mix the mashed potatoes with the sautéed ground mixed meat filling. [This is the secret!] The more filling, the tastier it is.
- Shape the mixed filling into small round balls.
- In a bowl, mix flour, eggs, and water to make a batter.
- Dip the shaped croquettes in the batter, then coat them with breadcrumbs. [This is the secret!] Using fine breadcrumbs is recommended.
- Fry the croquettes in oil heated to about 170℃. Fry until the surface is golden brown.
- Arrange the fried croquettes on a plate.
