Ingredients

Main Ingredients (2 servings)

  • Pork (thinly sliced) 200g
  • Shredded Cheese 40g
  • Perilla Leaves 10 leaves
  • Potato Starch 2 tsp

Seasonings

  • Cooking Sake (Rice Wine) 1 tbsp
  • Salt and Pepper (to taste)
  • Vegetable Oil (for cooking)

Steps

  1. Tear the 200g of thinly sliced pork into smaller pieces by hand and place in a bowl.
  2. Add 1 tbsp of Cooking Sake (Rice Wine) and salt and pepper to taste to the pork in the bowl and mix well to coat.
  3. Add 2 tsp of Potato Starch and mix well to coat. [Key Tip!] Coating the pork with potato starch will keep it moist and tender, preventing it from becoming tough.
  4. Add 40g of shredded cheese and the 10 perilla leaves (with stems removed, torn into small pieces) to the bowl. Mix thoroughly until everything is evenly combined. [Key Tip!] Tearing the perilla leaves by hand enhances their aroma.
  5. Heat vegetable oil for cooking in a frying pan over medium heat.
  6. Take portions of the mixed ingredients by hand, shape them into flat circles, and place them in the heated frying pan.
  7. Cook over medium heat until the bottom is browned.
  8. Once nicely browned on the bottom, flip the patties.
  9. Cook until the cheese is melted and the patties are golden brown and crispy.
  10. Cover the pan and steam-fry over medium heat for 2 minutes.
  11. Once cooked, transfer to a plate and serve. [Key Tip!] The salt and pepper, along with the saltiness of the cheese, will season the dish perfectly. Enjoy the contrast between the crispy cheese on the outside and the gooey cheese on the inside. Recommended as a snack or a bento side dish.
