Ingredients

Main Ingredients (2 servings)

  • Potatoes 300g (approx. 3 small)
  • Mayonnaise 2 tbsp
  • Potato Starch 2 tbsp

Seasonings

  • Water 1 tbsp
  • Water 2 tbsp
  • Salt (to taste)

Steps

  1. Peel and remove the eyes from 300g of potatoes.
  2. Julienne the potatoes into 2mm thick strips.
  3. Place the julienned potatoes in a heatproof container.
  4. Add 1 tbsp of water, cover with plastic wrap, and microwave for 3 minutes on 600W.
  5. To the microwaved potatoes, add 2 tbsp of mayonnaise, 2 tbsp of water, and a pinch of salt. Mix well.
  6. Add 2 tbsp of potato starch and mix until the mixture holds together.
  7. Wet your hands with water. This is the key! It prevents the mixture from sticking and makes it easier to shape.
  8. Form the potato mixture into balls about 3cm in diameter by squeezing them in your hands.
  9. Heat about 5mm of oil in a frying pan over medium heat.
  10. Once the oil is hot, carefully place the shaped potato bites into the pan.
  11. Fry until golden brown, turning them over to ensure even cooking until they turn a beautiful golden brown color.
  12. Remove the fried potato bites from the pan and drain excess oil.
  13. Plate and serve. It's ready!
  14. Serve with ketchup on the side, if desired.
