Ingredients
Main Ingredients (5 cakes)
- Sweet Potato 200g
- Rice Flour 60g
Seasonings
- Sugar 40g
- Water 2-3 tsp
Steps
- Cut 200g Sweet Potato into 1cm cubes.
- Soak the cut sweet potato in water for 10 minutes to remove bitterness.
- Drain the soaked sweet potato thoroughly in a colander.
- In a bowl, combine the drained sweet potato with 40g Sugar and mix well to let the sugar soak in.
- After the sugar has soaked in, let it sit for about 20 minutes until moisture is released.
- Once moisture is released from the sweet potato, add 60g Rice Flour and mix. [Key Tip!] Use rice flour specifically for cooking and baking. The amount of water may vary depending on the type of rice flour used, so be mindful.
- Gradually add water while adjusting the consistency and mix. [Key Tip!] Adjust the batter to a consistency where lines are drawn in the rice flour when the sweet potato pieces are slightly pulled apart.
- Scoop the mixture with a spoon, divide into 5 portions, and place into glassine cups or aluminum cups. [Key Tip!] If you don't have cups, you can improvise by shaping parchment paper into cup forms.
- Place a small plate on top of a small dish in a deep frying pan. Pour water around the edges of the pan so it doesn't get on the batter, and bring to a boil over high heat.
- Once boiling, reduce to medium-low heat, cover with a lid, and steam for 15 minutes. [Key Tip!] If the water level gets low during cooking, add more water as needed to maintain steaming.
- After steaming, check if the sweet potato is cooked through by inserting a pointed object. If it's not cooked enough, continue steaming for a little longer as needed.
- Carefully remove from the pan, being mindful of burns.
