Ingredients

  • Spaghetti 160g
  • Oil Sardines 1 can (100g)
  • Avocado 1
  • Garlic 1 clove
  • Red Chili Pepper 1
  • Italian Parsley (to taste)

Seasonings

  • Olive Oil 1 tbsp
  • Lemon Juice 2 tsp
  • Salt (to taste)
  • Black Pepper (to taste)

Steps

  1. Bring a large pot of water to a boil and start cooking the spaghetti (160g).
  2. Peel and pit the avocado (1).
  3. Finely chop the peeled avocado.
  4. Heat 1 tbsp of olive oil in a frying pan over medium heat, and add 1 clove of garlic.
  5. Once the garlic is fragrant, add 1 red chili pepper and continue to sauté.
  6. When fragrant, add the entire 1 can of oil sardines (including the oil) to the pan. Mash with a spatula and stir-fry to infuse the garlic aroma.
  7. Add the cooked spaghetti to the frying pan and add a little pasta water.
  8. Add the finely chopped avocado and toss everything together to coat the spaghetti with the oil sardines and avocado.
  9. Taste and adjust seasoning with salt (to taste) and pasta water if necessary.
  10. For finishing, drizzle in a little more olive oil and 2 tsp of lemon juice, and mix briefly.
  11. Plate the pasta, sprinkle with black pepper (to taste), and garnish with Italian parsley (to taste).
