A dish of mixed noodles that lets you fully enjoy the umami of oysters. It's quick to make with simple ingredients. The key is how you cook the oysters and how you let the delicious juices from the oysters soak into the noodles. Uses 'Bentenkaki' from Akkeshi, Hokkaido.

- Chinese Noodles
- Lettuce
- Garlic
- Chili Pepper
- Sichuan Pepper
Seasonings
- [A] Sesame Oil 2 tbsp
- [A] Soy Sauce 1 tbsp
- [A] Chicken Broth 3 tbsp
- [A] Salt (to taste)
- [A] Pepper (to taste)
- [B] White Sesame Oil 2 tbsp
Steps
- Slice the garlic and shred the lettuce. Prepare chili pepper and Sichuan pepper to your liking.
- In a bowl, combine 2 tbsp Sesame Oil, 1 tbsp Soy Sauce, 3 tbsp Chicken Broth, a pinch of Salt, and a pinch of Pepper. Mix well to create the sauce.
- Heat a frying pan over high heat until very hot and coat with oil. Start boiling the Chinese noodles in a separate pot.
- Add the sliced garlic and chili pepper to the frying pan, add 2 tbsp White Sesame Oil, and sauté until fragrant.
- When the noodles have 1 minute left to cook, add the oysters to the frying pan with the sautéed vegetables and cook them. (Key Tip!) Cook until the oysters are plump to lock in their flavor. Lightly season with a pinch of Salt and a pinch of Pepper, then add 2 tbsp of noodle boiling water and mix. Don't let the umami from the oysters escape.
- Drain the boiled Chinese noodles immediately and add them to the bowl with the sauce made in Step 2. Add the shredded lettuce and mix well with the noodles and sauce.
- Add all the cooked oysters and their juices from Step 5 to the bowl of mixed noodles and lettuce. Gently mix everything together. (Key Tip!) Ensure the juice rich with umami from the oysters thoroughly coats the noodles.
