- 10 Eggs

- [A] 90g Sugar
- [A] 150ml Kombu Dashi (Kelp Broth)
- [A] 2 tbsp Cooking Sake (Rice Wine)
- [A] 2 tbsp Soy Sauce
Steps
- Preheat oven to 180℃ (350°F).
- Crack 10 eggs into a bowl and whisk thoroughly.
- Add 90g sugar to the whisked eggs and mix. Then, add 150ml Kombu Dashi, 2 tbsp Cooking Sake, and 2 tbsp Soy Sauce and mix well.
- Strain the egg mixture through a sieve into an oven-safe pot or mold.
- Cover the mold tightly with aluminum foil. Place the mold in a baking dish filled with hot water.
- Bake in the preheated oven at 180℃ (350°F) for 15 minutes.
- Remove the aluminum foil and bake for another 10 minutes. (The Key!) Browning the omelette after removing the foil.
- Carefully remove the cooked omelette from the mold and cut into desired pieces.
