Seasonings

  • White Sesame Oil 4 tbsp

  • Chicken Powder 1 tbsp
  • Black Pepper (to taste)
  • Salt (to taste)

Steps

  1. Thinly slice the green onions diagonally.
  2. Place the sliced green onions in a bowl, sprinkle with 1 tsp salt, and rub them by hand. This step enhances the green onion's aroma.
  3. Bring a large pot of water to a boil and warm your serving bowl.
  4. Add 1 ramen noodle serving to the boiling water and cook for approximately 2 minutes and 30 seconds.
  5. In a separate pot, heat 4 tbsp white sesame oil until it just begins to smoke.
  6. Add the canned scallops (1 can, 60-70g) with their juice to the hot sesame oil.
  7. Add a ladleful of the noodle cooking water to the pot and bring to a boil.
  8. Drain the cooked ramen noodles and add them to the pot with the canned scallops.
  9. Stir in 1 tbsp chicken powder, black pepper to taste, and salt to taste.
  10. Add 1/3 of the salt-rubbed green onions to the pot and simmer with the noodles for a short while. Simmering the noodles helps them absorb the soup's savory flavor.
  11. Transfer the noodles and soup to the warmed serving bowl, top with the remaining green onions, and serve.
