Seasonings

  • [A] Soy Sauce 4 tbsp
  • [A] Water 3 tbsp
  • [A] Mirin (Sweet Rice Wine) 2 tbsp
  • [A] Sugar 1 tbsp

Steps

  1. Take 6 eggs out of the refrigerator.
  2. Gently place the cold eggs into boiling water and boil for 7-8 minutes. This is the key to achieving your desired level of softness by keeping both the egg and water temperatures consistent.
  3. Transfer the boiled eggs to cold water or an ice bath to cool.
  4. Combine 4 tbsp Soy Sauce, 3 tbsp Water, 2 tbsp Mirin (Sweet Rice Wine), and 1 tbsp Sugar in a pot. Heat over medium heat.
  5. Stir with chopsticks to dissolve the seasonings. Once it comes to a rolling boil, turn off the heat and let it cool down.
  6. Peel the eggs.
  7. Place the peeled eggs into a resealable bag or similar container.
  8. Pour the cooled sauce into the bag and remove any air from inside.
  9. Let the eggs marinate in the refrigerator for 2-3 hours.
  10. Cut the marinated eggs in half using a knife or kitchen string.
