Seasonings
- [A] Soy Sauce 4 tbsp
- [A] Water 3 tbsp
- [A] Mirin (Sweet Rice Wine) 2 tbsp
- [A] Sugar 1 tbsp
Steps
- Take 6 eggs out of the refrigerator.
- Gently place the cold eggs into boiling water and boil for 7-8 minutes. This is the key to achieving your desired level of softness by keeping both the egg and water temperatures consistent.
- Transfer the boiled eggs to cold water or an ice bath to cool.
- Combine 4 tbsp Soy Sauce, 3 tbsp Water, 2 tbsp Mirin (Sweet Rice Wine), and 1 tbsp Sugar in a pot. Heat over medium heat.
- Stir with chopsticks to dissolve the seasonings. Once it comes to a rolling boil, turn off the heat and let it cool down.
- Peel the eggs.
- Place the peeled eggs into a resealable bag or similar container.
- Pour the cooled sauce into the bag and remove any air from inside.
- Let the eggs marinate in the refrigerator for 2-3 hours.
- Cut the marinated eggs in half using a knife or kitchen string.
- Arrange the eggs on a plate and drizzle with some of the marinade.
