Special preparation to make bitter melon milder. Rubbing the sliced bitter melon with salt and sugar results in an easy-to-eat finish. It can also be used in stir-fries and salads.

- Bitter Melon 1

- [A] Salt 1/2 tsp
- [A] Sugar 2 tsp
Steps
- Trim the ends of the bitter melon.
- Cut the bitter melon in half lengthwise.
- Scoop out the seeds and pith from the bitter melon using a spoon. (Key Tip! The pith isn't extremely bitter, so just a light scrape is enough.)
- Slice the bitter melon from the edge to your desired width (5-6mm for stir-fries, 2-3mm for salads).
- Place the sliced bitter melon in a bowl, add 2 tsp sugar and 1/2 tsp salt. (Key Tip! Using sugar along with salt will make the overall bitterness of the bitter melon milder.)
- Mix well with chopsticks until everything is combined and the bitter melon is coated. Let it sit for 5 minutes.
- After 5 minutes, if moisture has come out of the bitter melon, it's a sign that the salt and sugar have penetrated.
- The prepared bitter melon can be used directly in stir-fries or boiled dishes without washing. This also gives the bitter melon a perfect subtle seasoning.
