Ingredients
Main Ingredients (4 servings)
- Yam (Nagaimo) 400g
- Egg 1 pc
- Aonori (Dried Green Seaweed) or shredded nori, to taste
- Cooked Rice, as needed
Seasonings
- [A] Dashi Broth 50ml
- [A] Soy Sauce 1.5 tbsp
- [A] Mirin (Sweet Rice Wine) 1 tbsp
- [A] Salt 2-3 pinches
Steps
- Crack 1 egg into a mortar.
- Grate about 1/6 of the yam and add it to the mortar with the egg.
- Using the pestle, grind until there are no visible lumps of egg white. [This is the key!] Eliminating egg white lumps will result in a smooth grated yam.
- Grate the remaining yam and add it to the mortar.
- To further enhance the smoothness, grind thoroughly again with the pestle.
- Add 50ml Dashi Broth, 1.5 tbsp Soy Sauce, 1 tbsp Mirin (Sweet Rice Wine), and 2-3 pinches Salt. [This is the key!] Using light soy sauce will result in a beautiful color.
- Using the pestle, mix until the seasonings are well combined throughout.
- Pour the generous amount of grated yam over warm rice. Garnish with Aonori or shredded nori to your preference and enjoy.
