  • Beef belly 200g
  • Seared tofu 1 block
  • Onion 1/2
  • Leek 1 stalk
  • Shirataki noodles 200g
  • Maitake mushrooms 1 pack

Seasonings

  • [A] Soy Sauce 4 tbsp
  • [A] Cooking Sake (Rice Wine) 3 tbsp
  • [A] Mirin (Sweet Rice Wine) 4 tbsp
  • [A] Hondashi (Dashi Granules) 1 tbsp
  • [A] Sugar 4 tbsp
  • Salt a pinch

Steps

  1. In a bowl, combine Soy Sauce 4 tbsp, Cooking Sake (Rice Wine) 3 tbsp, Mirin (Sweet Rice Wine) 4 tbsp, Hondashi (Dashi Granules) 1 tbsp, and Sugar 4 tbsp. Mix well to create the simmering liquid.
  2. Cut Onion 1/2 in half lengthwise, then slice into 5mm thick pieces.
  3. Tear Maitake mushrooms 1 pack into bite-sized pieces by hand. (Pro Tip: Maitake mushrooms have natural lines; tearing them along these lines will create nicely sized pieces.)
  4. Trim the root end of Leek 1 stalk and cut into 5cm pieces. (Pro Tip: The green parts also help remove any gamey smell from the beef, so wash them lightly and use.)
  5. Boil Shirataki noodles 200g in hot water for about 2 minutes to remove any bitterness. Cut into bite-sized pieces with kitchen scissors. (Pro Tip: Boiling in hot water thoroughly removes the unpleasant odor.)
  6. Thoroughly pat dry the surface of Seared tofu 1 block with paper towels. (Pro Tip: Wiping off the moisture prevents the simmering liquid from becoming diluted, allowing the flavors to penetrate better.)
  7. Cut the Seared tofu in half horizontally, then cut each half into approximately 6 bite-sized pieces. (Pro Tip: If the pieces are too large, they won't absorb the flavors well, so be mindful of the size.)
  8. Heat a frying pan over high heat without oil, then add the Leeks and grill until browned on both sides.
  9. Remove the nicely browned Leeks from the pan.
  10. Lightly oil the same frying pan and heat over medium heat. Add Beef belly 200g and stir-fry thoroughly.
  11. Sprinkle Salt a pinch over the stir-frying Beef to season.
  12. Remove the Beef once it's cooked through.
  13. Add the prepared simmering liquid to the frying pan, utilizing the beef drippings. Arrange the Onions, Maitake mushrooms, Seared tofu, and the grilled Leeks neatly in the pan.
  14. Bring the simmering liquid to a boil over medium heat.
  15. Once the ingredients are cooked and softened, create a space in the pan and add the boiled and cut Shirataki noodles.
  16. After adding all the Shirataki noodles, cover with aluminum foil as a lid. Reduce heat to low and simmer for 20 minutes.
  17. After 20 minutes, remove the lid and create a space to add the Beef. If any ingredients are not submerged in the simmering liquid, flip them over to ensure they are coated.
  18. Add the stir-fried Beef to the empty space. Increase heat to medium and simmer gently for about 2 minutes.
  19. Serve in bowls and enjoy!
