A healthy and delicious alternative to potato salad, made with okara! Starting with preparing the onions and cucumbers, this dish is finished with a rich blend of mayonnaise and sesame dressing. Chilling it in the refrigerator allows the flavors to meld, creating a moist and smooth texture. This is a healthy salad recipe that you can enjoy without any guilt.
Ingredients
Main Ingredients (2 servings)
- Okara 150g
- Onion
- Cucumber 1 pc
- Ham
Seasonings
- Sugar 1 tsp
- [A] Mayonnaise 3 tbsp
- [A] Sesame Dressing 3 tbsp
- Black Pepper (to taste)
Steps
- Thinly slice the onion.
- Slice the cucumber.
- Rub 1 tsp of sugar into the sliced vegetables (onion, cucumber) and let sit for about 5 minutes until shiny.
- Lightly break apart the 150g of okara with a spoon.
- Add 3 tbsp of mayonnaise and 3 tbsp of sesame dressing to the broken-apart okara.
- Mix everything thoroughly.
- Squeeze out the water from the vegetables (onion, cucumber) that have been sitting for 5 minutes, and add them to the okara.
- Tear the ham and add it to the okara.
- Grind and add black pepper as desired.
- Mix everything thoroughly.
- Cover with plastic wrap and let rest in the refrigerator for at least 15 minutes. (This is the key!) Resting it in the refrigerator allows the flavors to meld and results in a moist and smooth finish.
