  • Potatoes 4 medium
  • Onion 1/2 medium
  • Thick-cut Bacon 80g
  • Garlic 1 clove
  • Parsley (for garnish) to taste

Seasonings

  • Olive Oil 1 tbsp
  • Granulated Consommé 1/2 tsp
  • Whole Grain Mustard 1 tsp
  • Mirin (Sweet Rice Wine) 1/2 tsp
  • Salt and Pepper to taste

Steps

  1. Cut 4 medium potatoes into bite-sized pieces.
  2. Place the cut potatoes in a bowl, soak in water for 5 minutes to remove excess starch.
  3. Slice 1/2 medium onion.
  4. Cut 1 clove garlic in half, remove the sprout, and mince.
  5. Cut 80g thick-cut bacon into approximately 1cm wide strips.
  6. Drain the soaked potatoes, cover loosely with plastic wrap, and microwave at 600W for 6 minutes.
  7. Heat 1 tbsp olive oil in a frying pan over medium-low heat and sauté the minced garlic until fragrant.
  8. Once fragrant, add the sliced onion and bacon. Sauté until the onion is about 80% cooked.
  9. Add the microwaved potatoes and sauté for 1-2 minutes, browning them slightly.
  10. Add 1/2 tsp Mirin (Sweet Rice Wine), 1/2 tsp granulated consommé, and 1 tsp whole grain mustard. Stir well.
  11. Taste and adjust seasoning with salt and pepper to taste.
  12. Transfer to a serving dish and sprinkle with parsley if desired.
