Responding to countless requests, here's an ultra-efficient taco recipe with all the fuss and hidden ingredients removed. We'll simmer pork, serve it with homemade salsa and a flour tortilla. It's surprisingly easy for beginners, yet the taste is exquisite. You won't be able to stop after one bite, so enjoy the ultimate taco life!
Ingredients
Main Ingredients (2 servings)
- Pork Belly 200g
- Garlic 1 clove
- Lime 1/2
- Onion 1/2
- Cilantro 1 bunch
- All-Purpose Flour 130g
- Vegetable Oil 1 tsp
- Bell Peppers 2 (or 8 Shishito Peppers)
- Water 60ml
- Corn Snacks (like Pocky) (to taste)
Seasonings
- Cola 150cc
- Soy Sauce 1 tsp
- Salt (a pinch)
- Salt (to taste)
- [A] Salt 1 tsp
- [A] Vinegar 1 tsp
- [A] Water 50ml
- [A] Tabasco (optional) 1 tsp
Steps
- Cut the lime into 8 wedges.
- Finely chop 1/2 onion.
- Chop cilantro to your desired amount.
- Grate about half a clove of garlic.
- Cut 200g pork belly into 5mm thick slices. This is the key! Pork belly with plenty of fat is perfect for tacos.
- Stir-fry the cut pork in a pan until it's nicely browned.
- Add the grated garlic to the pan. This is the key! Adding garlic later prevents it from burning.
- Add 150cc cola, a pinch of salt, the juice of 1/8 lime, and soy sauce to the pan. Simmer until thickened.
- In a blender, combine half a clove of garlic, 2 bell peppers (or 8 shishito peppers), 1/4 onion, 1 tsp salt, 5-10g cilantro, 1/4 lime, 1 tsp vinegar, 50ml water, and 1 tsp Tabasco. Blend to make salsa verde. This is the key! Chipotle Tabasco will enhance the flavor.
- In a bowl, mix 130g all-purpose flour, 1 tsp vegetable oil, a pinch of salt, and 60ml water. Knead for about 5 minutes until the dough is smooth. This is the key! There's no need to let the dough rest.
- Divide the kneaded dough into 8 portions (25g each) and shape into balls. This is the key! Folding the cracked edges inward creates a smooth surface.
- Sprinkle all-purpose flour on a clean surface. Pat the dough with your hands and stretch it while rotating to about a 12cm diameter. This is the key! The dough is tear-resistant and doesn't shrink easily, making it simple to shape.
- Place the shaped dough onto a well-heated frying pan and cook for 30 seconds.
- Once bubbles form on the surface, flip the dough and cook for another 20 seconds.
- Flip again and lightly press the surface. If the dough puffs up, it's done. This is the key! Storing in an airtight container with paper towels will result in perfect tortillas.
- On a plate, arrange the tortilla, simmered pork, salsa verde, chopped onion and cilantro, and serve with a wedge of lime. It's ready!
- For an extra touch, consider crushing and adding corn snacks.
