A simple Mochi-Only Okonomiyaki recipe using leftover New Year's mochi, perfect for a quick meal without needing a knife or cutting board. Ingredients

Main Ingredients (1 serving)

  • 1 Mochi cake (Kirimochi)
  • 3-4 Scallions (green onions)
  • 1 slice of melting cheese

Seasonings

  • 1 tsp Soy Sauce
  • 1 tbsp Sesame Oil
  • Vinegar (to taste)
  • Soy Sauce (to taste)

Steps

  1. Place 1 Mochi cake in a microwave-safe bowl. Add water just enough to cover the top of the mochi. (Key Tip!) Too little water will result in hardened mochi, while too much will increase cooking time.
  2. Heat in the microwave without covering with plastic wrap.
  3. After heating, discard only the water from the softened mochi.
  4. Finely chop 3-4 Scallions with scissors and add them to the bowl.
  5. Add 1 tsp Soy Sauce to the bowl for light seasoning.
  6. Tear 1 slice of melting cheese and add it to the bowl.
  7. While the mochi is still soft, gently mix everything together with the scallions, soy sauce, and cheese.
  8. Heat sesame oil in a frying pan. (Key Tip!) Sesame oil can burn easily, so use an appropriate amount.
  9. Spread the mixed mochi batter into the frying pan and shape it into a desired size.
  10. Once the edges are browned and the okonomiyaki no longer crumbles when shaken in the pan, flip it over.
  11. Grill the other side until crispy, similar to the first side.
  12. Transfer the cooked okonomiyaki to a plate.
  13. Serve with a dipping sauce made by mixing vinegar and soy sauce, if desired.
