This is a super simple and delicious Abutama Don recipe that you can whip up in no time using just three ingredients from your fridge. The combination of fragrant, juicy pan-fried tofu pockets and perfectly fluffy, melt-in-your-mouth eggs is exquisite. Highly recommended for busy days!
Ingredients
Main Ingredients (1 serving)
- Fried Tofu Pockets (Aburaage): 1 pc
- Eggs: 1
- Green Onions (Scallions): 1 stalk
- Warm Cooked Rice: 1 serving
Seasonings
- [A] Water: 100ml
- [A] Soy Sauce: 1.5 tbsp
- [A] Sugar: 1 tbsp
- Ground Sansho Pepper or Shichimi Togarashi (Japanese Seven Spice): to taste
Steps
- Thinly slice the green onions diagonally.
- Cut the fried tofu pockets into 4 pieces each.
- Heat a frying pan over medium heat without oil. Grill the fried tofu pockets until golden brown on both sides. This is the key! Grilling them in their own oil enhances their flavor and makes them absorb the broth better later.
- Add 100ml water to the pan with the grilled tofu pockets. Then, add 1.5 tbsp soy sauce and 1 tbsp sugar and simmer briefly. This is the key! Pouring soy sauce directly onto the tofu can cause it to absorb too much; add it around the edges after adding water.
- Add the sliced 1 green onion stalk to the tofu pockets that have absorbed the seasoning, and simmer briefly.
- Gently pour the lightly beaten egg into the pan, starting from the sides around the tofu pockets, not directly on top.
- Cover the pan and let it steam briefly until the egg reaches your desired level of doneness (soft-boiled).
- Serve the cooked tofu and egg over warm rice in a bowl. It's ready!
- Finish by sprinkling with ground sansho pepper or shichimi togarashi (Japanese seven spice) if desired. Enjoy!
