Elevate your summer staple, somen noodles! Koutaro Koutaro's 'Negi Kitsune Somen' offers an exquisite taste with just one simple twist to the mentsuyu. This refreshing somen dish, ready in only 5 minutes, is the perfect creative recipe for hot summer days.

Main Ingredients (2 servings)
- Deep-fried Tofu Pouch (Aburaage): 2 pieces
- Long Green Onion: 7-8 cm
- Somen Noodles: 3 bundles
Seasonings
- [A] Mentsuyu (2x concentrated): 1.5 tbsp
- [A] Sugar: 0.5 tbsp
- [A] Water: 5-6 tbsp
- Mentsuyu (for dipping sauce consistency): to taste
- White Sesame Seeds: to taste
- Grated Ginger: to taste
- Shichimi Togarashi (Japanese Seven Spice): to taste
Steps
- Finely julienne the 2 pieces of deep-fried tofu pouch as thinly as possible.
- Finely slice the 7-8 cm long green onion into thin rounds.
- In a dry frying pan, quickly toast the julienned deep-fried tofu pouch until fragrant.
- To the toasted deep-fried tofu pouch, add 1.5 tbsp mentsuyu (2x concentrated), 0.5 tbsp sugar, and 5-6 tbsp water. Simmer until the tofu has absorbed all the liquid and softened. Remove from heat. (Key Tip: It will soak up the flavor quickly and become tender).
- Boil water in a pot and cook the 3 bundles of somen noodles to your desired firmness.
- Drain the cooked somen noodles, rinse under cold water, and thoroughly squeeze out excess moisture. (Key Tip: Thoroughly squeezing out the water prevents the flavor from becoming diluted and ensures deliciousness).
- Pour mentsuyu (for dipping sauce consistency) to taste into a serving bowl. Add the prepared seasoned deep-fried tofu pouch and thinly sliced green onion.
- Optionally, add white sesame seeds to taste, grated ginger to taste, and shichimi togarashi to taste. Mix well. (Key Tip: If you want it colder, dilute the mentsuyu with water and ice. It's also delicious served as a 'bukkake' style somen).
