Ingredients

Main Ingredients (2 servings)

  • Okra 140g
  • Potato starch 15g
  • All-purpose flour 15g
  • Sparkling water 2½ tbsp
  • Vegetable oil 1 tsp

Seasonings

  • Chicken soup stock powder 1 tsp
  • Black pepper to taste
  • Garlic powder ⅓ tsp
  • Aji-shio (seasoned salt) to taste
  • Lemon to taste

Steps

  1. Cut off the tough ends of the okra stems.
  2. Cut the okra in half diagonally.
  3. Place 140g okra, 15g potato starch, and 15g all-purpose flour in a bowl.
  4. Add 1 tsp chicken soup stock powder, ⅓ tsp garlic powder, black pepper to taste, 1 tsp vegetable oil, and 2½ tbsp sparkling water to the bowl and mix. Tip! Adding oil makes the coating crispier, and adding sparkling water creates a fizzy effect in the coating, enhancing its crunchiness.
  5. Mix well until all the okra is evenly coated.
  6. Heat about 1cm of oil in the bottom of a pot over medium heat, and fry the coated okra. Tip! Using less oil will heat it up faster.
  7. Once the underside turns brown, flip them over and fry until they reach a Shiba Inu-like color (golden brown).
  8. Drain the oil from the fried okra. Tip! If the okra feels firm to the touch, it's a sign that it's perfectly crispy.
  9. Sprinkle Aji-shio (seasoned salt) to taste evenly over the fried okra.
  10. Plate and serve.
  11. Squeeze lemon over it if desired. Tip! The crispiness lasts even after some time.
