The 'Masterpiece Pepetama' is an egg-rich peperoncino that gained popularity at a restaurant in Fukuoka. This ultimate pasta recipe allows you to recreate the taste of a famous restaurant at home using Yamasa's 'Kore! Uma!! Tsuyu'.
Ingredients

- 1.6mm pasta 100g
- Eggs 2
- Bacon 30g
- Garlic 15g
- Red chili pepper 1
- Dried parsley
Seasonings
- Olive oil 1 tbsp
- [A] Kore! Uma!! Tsuyu 2 tsp
- [A] Chicken stock 1/2 tsp
- Salt (1% salinity for 1 liter of water)
- Olive oil (for finishing)
Steps
- Heat olive oil 1 tbsp in a frying pan, add bacon 30g, garlic 15g, and red chili pepper 1, and fry until crispy.
- Bring water to a boil in another pot, add salt (1% salinity for 1 liter of water) to the water, and cook 1.6mm pasta 100g al dente.
- Add one ladle of pasta cooking water, Yamasa 'Kore! Uma!! Tsuyu' 2 tsp, and chicken stock 1/2 tsp to the frying pan with the sautéed ingredients, bring to a boil, and mix. 【Tip!】 Remove from heat when the sauce becomes thick and only a small amount of liquid remains.
- Crack 2 eggs into a bowl and lightly beat them.
- Add the beaten eggs to the warmed frying pan with the sauce and mix quickly.
- Add the cooked pasta to the frying pan and mix well with the sauce and eggs.
- Plate the dish, drizzle with olive oil, and sprinkle with dried parsley for finishing.
