A local specialty from Kagawa Prefecture, Miso Zoni with sweet bean paste mochi. This exquisite dish, where the sweetness of anko surprisingly complements the rich miso broth, is easy to recreate.

Ingredients

Main Ingredients (2 servings)

  • Carrot 60g
  • Daikon radish 40g
  • Taro root 40g
  • Sato-no-Kirimochi Sweet Bean Paste Mochi

Seasonings

  • Iriko dashi 1.5 tsp
  • Saikyo white miso 5 tbsp
  • Aonori to taste

Steps

  1. Cut 60g carrot into half-moon slices, 40g daikon radish into ginkgo leaf shapes, and prepare 40g taro root.
  2. In a pot, add 400cc water, 1.5 tsp iriko dashi, the cut vegetables, Sato-no-Kirimochi Sweet Bean Paste Mochi, and 5 tbsp Saikyo white miso. Simmer until the mochi and vegetables are tender.
  3. Serve in a bowl and sprinkle with aonori to taste.
