Ingredients

Main Ingredients (2 servings)

  • 3 Cucumbers
  • 10g Ginger

Seasonings

  • [A] Soy Sauce 3 tbsp
  • [A] Vinegar 3 tbsp
  • [A] Sugar 1 tbsp
  • [A] Lemon Juice 1/2 tbsp
  • [A] Sesame Oil 1/2 tbsp
  • [A] White Sesame Seeds 1 tbsp

Steps

  1. Cut 3 cucumbers in half lengthwise, then cut each half in half again. Cut each piece into thirds to create sticks.
  2. Finely julienne 10g of ginger.
  3. Microwave 3 tbsp of vinegar for about 30 seconds.
  4. Add 3 tbsp of soy sauce, 1 tbsp of sugar, 1/2 tbsp of lemon juice, and the microwaved 3 tbsp of vinegar to a bag.
  5. Close the bag and mix the seasonings well.
  6. While still warm, add the cut cucumbers, 1/2 tbsp of sesame oil, and 1 tbsp of white sesame seeds to the bag.
  7. Mix everything well.
  8. Add the julienned ginger and mix again.
  9. Refrigerate for about 1 hour to let them pickle.
