  • Rice Flour 100g
  • Sugar 70g

    1. Cut 300g of sweet potato into 1cm cubes.
    2. Soak the cut sweet potato in water for about 5 minutes.
    3. Drain the soaked sweet potato and pat it dry with paper towels.
    4. Add 70g of sugar to the sweet potato, mix well until evenly coated, and let it sit for 20 minutes. (The key here is that the sugar will dissolve in the moisture released from the sweet potato.)
    5. Add 100g of rice flour and mix well.
    6. Cut parchment paper into approximately 10cm x 10cm squares.
    7. Place the Onimanjyu dough onto the parchment paper squares.
    8. Steam over low to medium heat for 15 to 20 minutes.
    9. Once steamed, remove from heat. It's ready!
