- Cake flour 20g
- Mayonnaise 8g

- [A] Oregano 4 dashes
- [A] Garlic powder 4 dashes
- [B] Salt 2 pinches
- [B] Soy sauce 1 tsp
- [B] MSG(Ajinomoto) (MSG) 2 dashes
- [B] Garlic powder 3 dashes
- [B] Oregano 3 dashes
- [B] Black pepper to taste
- [B] Carbonated water 2 tbsp
- [C] Ajishio (seasoned salt) to taste
- [C] Garlic powder to taste
Steps
- Make about 3 incisions in the muscle of 500g chicken drumettes.
- Place the prepped 500g chicken drumettes in a bowl, add 1/3 tsp salt, 4 dashes MSG(Ajinomoto) (MSG), black pepper to taste, 4 dashes oregano, and 4 dashes garlic powder, and massage well. Let sit for 15 minutes.
- In a separate bowl, add 20g potato starch, 20g cake flour, 8g mayonnaise, 2 pinches salt, 1 tsp soy sauce, 2 dashes MSG(Ajinomoto) (MSG), 3 dashes garlic powder, 3 dashes oregano, black pepper to taste, and 2 tbsp carbonated water, then mix to create the batter.
- Generously coat the seasoned chicken drumettes with the prepared batter.
- Deep-fry in oil heated to 170℃.
- Plate the fried chicken, sprinkle with Ajishio (seasoned salt) to taste and garlic powder to taste, and serve with lemon wedges.
