This deli-style side dish salad with broccoli and hard-boiled eggs is quick and easy to make by simply boiling and mixing. It's packed with nutrients, vibrant in color, and adds a festive touch to your table. The special Japanese-style dressing is the key!

Ingredients

Main Ingredients (2 servings)

  • 1 head Broccoli
  • 4 Eggs

Seasonings

  • [A] Mayonnaise 2 tbsp
  • [A] Mirin (Sweet Rice Wine) 1 tbsp
  • [A] Shiro Dashi (White Soy Sauce Base) 2 tsp
  • [A] Sugar 1/2 tsp
  • [A] Grated Cheese 25g
  • [A] Black Pepper generously

Steps

  1. Bring a pot of water to a boil.
  2. Cut 1 head of broccoli into florets, and cut the stem into bite-sized pieces.
  3. Add 4 eggs to the boiling water and cook for 10 minutes. Once cooked, cool them in ice water and let them cool down.
  4. Place the cut broccoli in a heatproof container and microwave at 600W for 4 minutes.
  5. In a bowl, combine all the [A] seasonings (2 tbsp mayonnaise, 1 tbsp Mirin (Sweet Rice Wine), 2 tsp Shiro Dashi (White Soy Sauce Base), 1/2 tsp sugar, 25g grated cheese, generous black pepper) and mix well. The key is to add plenty of black pepper for flavor and a spicy kick.
  6. Toss the heated broccoli with the prepared dressing.
  7. Peel the cooled hard-boiled eggs and roughly chop them.
  8. Add the roughly chopped hard-boiled eggs to the dressed broccoli and mix gently.
