- 3 Cucumbers
- 10g Ginger
Seasonings
- [A] Soy Sauce 3 tbsp
- [A] Vinegar 3 tbsp
- [A] Sugar 1 tbsp
- [A] Lemon Juice 1/2 tbsp
- [A] Sesame Oil 1/2 tbsp
- [A] White Sesame Seeds 1 tbsp
Steps
- Cut 3 cucumbers in half lengthwise, then cut each half in half again. Cut each piece into thirds to create sticks.
- Finely julienne 10g of ginger.
- Microwave 3 tbsp of vinegar for about 30 seconds.
- Add 3 tbsp of soy sauce, 1 tbsp of sugar, 1/2 tbsp of lemon juice, and the microwaved 3 tbsp of vinegar to a bag.
- Close the bag and mix the seasonings well.
- While still warm, add the cut cucumbers, 1/2 tbsp of sesame oil, and 1 tbsp of white sesame seeds to the bag.
- Mix everything well.
- Add the julienned ginger and mix again.
- Refrigerate for about 1 hour to let them pickle.
