Ingredients

Main Ingredients (Serves 3 cucumbers)

  • Cucumbers 3 pcs
  • Bonito Flakes (Katsuobushi) 1 sachet

Seasonings

  • [A] Sugar 2 tbsp
  • [A] Salt 1 tsp
  • [A] Wasabi 1 tbsp
  • [A] Soy Sauce 1/2 tsp
  • [A] Vinegar 1/2 tbsp
  • Dashi Pack 1 pc
  • Dashi Pack 1 pc
  • Dashi Pack 1 pc

Steps

  1. Rub 3 cucumbers with 1 tsp salt and roll them around.
  2. Rinse the cucumbers under water and pat them completely dry.
  3. Trim the ends off the cucumbers and slice them diagonally into 1cm thick pieces.
  4. Place the sliced cucumbers into a resealable bag.
  5. Place 1 sachet of Bonito Flakes (Katsuobushi) into a dashi pack (or tea bag) and seal the opening.
  6. Add 2 tbsp sugar, 1 tsp salt, 1/2 tbsp vinegar, 1/2 tsp soy sauce, and 1 tbsp wasabi to the resealable bag with the cucumbers.
  7. Seal the bag and mix everything thoroughly.
  8. Add the bonito flake pack to the bag and gently knead.
  9. Remove the air from the bag, seal it, and refrigerate for at least 3 hours.
  10. Done. Enjoy!
