This recipe makes crispy and fragrant grilled rice balls that are perfect for freezing. Simply mix seasonings into the rice, form into balls with miso, and grill them in a pan until golden brown. They're ideal for making ahead and enjoying a delicious treat anytime.

Ingredients

Main Ingredients (2 cups (approx. 300g))

  • Rice 2 cups

Seasonings

  • [A] Soy Sauce 2.5 tbsp
  • [A] Mirin (Sweet Rice Wine) 1 tbsp
  • [A] Mentsuyu (Noodle Soup Base) 1 tsp
  • [A] Grated Garlic 0.5 tsp
  • Miso paste 1 tsp
  • Sesame oil (to taste)

Steps

  1. Rinse 2 cups of rice and drain thoroughly.
  2. In the rice cooker pot, add [A] Soy Sauce 2.5 tbsp, [A] Mirin (Sweet Rice Wine) 1 tbsp, [A] Mentsuyu (Noodle Soup Base) 1 tsp, and [A] Grated Garlic 0.5 tsp, then mix well.
  3. Add water up to the 2-cup marking, stir again, and cook as usual.
  4. After cooking, mix the rice thoroughly.
  5. Add Miso paste 1 tsp and mix until evenly combined with the rice.
  6. Shape the rice into onigiri by pressing it together firmly with your hands.
  7. Let the formed onigiri sit for about 10 minutes.
  8. Heat a frying pan over medium heat, add Sesame oil (to taste), and spread it evenly.
  9. Place the onigiri in the pan and reduce the heat to medium-low.
  10. Grill until a good char forms on one side.
  11. Flip the onigiri and grill the other side until similarly browned.
  12. Grill all the sides until they develop a nice char.
  13. Once evenly browned and fragrant, they are ready. Enjoy!
